More than Mimosas on New Years Day

As the clock inches past midnight on New Year's Eve, the symphony of clinking glasses and laughter that fills the air starts to dim. Those liquid architects of joy that take center stage in the grand celebration of a fresh start the night before are left abandoned for the blissful wonders of a well-deserved slumber.

Now...what to do with the bottles of Champagne exuberantly popped to toast the beginning of a New Year? They sit discarded in the fridge with spoons swaying just inside the rim to preserve the precious bubbles. Just like the sun dancing its first rays across the horizon, the morning Champagne cocktail is the dazzling duet of bubbly and citrus, whispering promises of zest and effervescence for the year ahead.


While the Mimosa is the classic morning cocktail, Maddex Mercantile would like to introduce our new favorite the Grapefruit Ginger Spritz. Just like the classic Mimosa, the In Grapefruit Ginger Spritz is like a liquid sunrise, blending the radiant hues of ripe grapefruits with the golden spark of fresh ginger. With each sip, it's as if the sun and spice engage in a tantalizing dance, creating a refreshing elixir that awakens the palate with a burst of flavor that's both invigorating and harmoniously balanced welcoming you into the New Year!


Maddex Mercantile's

Grapefruit Ginger Spritz

1 cup sugar

1 cup water

4 Tbsp chopped fresh ginger

4 cups fresh squeezed grapefruit juice


  • Bring sugar, water, and ginger to a boil in a small saucepan over medium-high, stirring occasionally. Reduce heat to medium; simmer until sugar dissolves and mixture reduces to 1 cup, Usually takes 4 to 5 minutes.

  • Pour mixture through a strainer into a measuring cup and discard ginger. Refrigerate until cold.

  • Combine ginger syrup with grapefruit juice in a carafe..

  • To serve, serve equal parts preferred bubbly (Champagne, Prosecco, Sparkling Wine, etc.) with Ginger Grapefruit juice.
